The Story

Zuccardi’s Polígonos lineup maps the Uco Valley village by village—one wine per sub-region, each a portrait of a single place. San Pablo is the highest and coolest of the Malbec addresses, at 4,593 feet above sea level, on limestone-laced alluvial soils that give the wine its chalky backbone. Sebastián Zuccardi—Wine Advocate calls him “the finest producer in Argentina at the moment”—makes it without oak, without additions: concrete vats, indigenous yeast, nothing between the wine and the place it came from.

Wine Access Tasting Note

Robust, focused, and elegant, with a medium purple-ruby core. The nose is multilayered—black plum, fresh cherry, dried violets, cinnamon, cumin, and sandalwood. The palate is fleshy and full, packed with cassis, strawberry preserves, purple flowers, and spice, with a stony mineral thread running through. Vivid fruit and lively acidity carry through to a finish of red and black fruit with fresh herbs. Drink now–2033.

Enticing black pepper, dried herbs and tangy thyme and citrus, together with blueberries and lavender on the nose. This is so pure, racy and characterful. So intense and broad, but medium-bodied and not hefty. On the contrary, this is so easy to drink. Unique style, coming from high-altitude vineyards. Drink or hold.

Of all the Malbecs in the Polígonos range, the 2021 Polígonos San Pablo Malbec is the lighter and more reductive one, with a slimmer palate and perhaps aromas of white flowers. This is also the lowest in alcohol and the one coming from the cooler place. It’s floral and elegant, perfumed and ethereal, always the last Malbec to be harvested. All the Malbecs ferment and mature in concrete and transmit a sensation of purity and limestone minerality, with citrus and acid berry sensations. Here, they destem all the fruit, which is what they decided on, after many trials and errors, to avoid green notes. This has fine tannins and is medium-bodied, very elegant, fresh and pleasant, pure Malbec juice with no interference. The whole Polígonos range represents very good value, all from owned vineyards that are worked organically but not certified.

For this unoaked Malbec, Sebastián Zuccardi uses grapes from a vineyard in the San Pablo Geographic Indication (GI) at 1,400m – one of the coolest regions in the Uco Valley. The 2021 vintage boasts an attractively floral nose in which notes of mountain herb lend a minty flourish to the precise red fruit flavours. It’s juicy and free-flowing with refreshing acidity and refined, pleasantly grippy tannins before the long, fragrant finish.

Pure Malbec, No Interference

There is a map on the wall of Sebastián Zuccardi’s winery that shows the Uco Valley divided into shapes—triangles, trapezoids, irregular polygons—each one tracing the outline of a different village sub-region. He called the project Polígonos: one wine per shape, one wine per place, each a precise, unembellished portrait of the soil and altitude it came from.

San Pablo is one of those shapes. It sits in Tunuyán, at the foot of the Andes, on soils of alluvial origin—sandy loam over medium gravels blanketed in calcium carbonate, the limestone crust that gives the wine its chalky backbone. At 4,593 feet, the nights are cold enough to slow everything down. San Pablo is always the last Malbec Zuccardi picks—the one that takes the longest to ripen, carrying the most fragile, most elevated expression of the grape.

In 2021, a cool, slow-ripening season brought the reds in with exceptional freshness and acidity—conditions that suit this high-altitude site better than most.

Sebastián is not in the business of embellishment. The fruit is macerated for 20 days in concrete vats with indigenous yeast, then aged entirely in concrete. No oak, no additions—nothing between the wine and the place it came from. He landed on full destemming for San Pablo after many trials, finding it the surest way to preserve freshness without green notes. The vineyards are worked organically, without herbicides or systemic treatments, though not yet formally certified.

The winery itself is a statement of intent—constructed from stones excavated while planting these same Uco Valley vineyards, and named the World’s Best Vineyard three consecutive years. His philosophy: not to make perfect wines, but wines that express the place.

In the glass, expect dried violets, black plum, and fresh cherry threaded with mountain herb and spice. The palate is fleshy but not heavy—lively acidity carries cassis and strawberry through a finish anchored by chalky minerality. Wine Advocate called it “floral and elegant, perfumed and ethereal.” James Suckling found it “so pure, racy and characterful—intense and broad, but medium-bodied and not hefty.” Decanter praised its “juicy, free-flowing” character and “long, fragrant finish.”
