A dark red core in the glass. Aromas of deep red fruits, exotic spices, and herbs, all cradled in a basket of red roses. The palate is lush, silky, and spiced, with dark cherry, plum, and kola nut in the midpalate. Silky tannins carry a long and joyful finish. New Heights for Pinot Noir

If we had to name one less-than-mainstream Pinot region beloved by just about every somm we know, it would be Mendocino. So it was no surprise that the team at Chicago’s Michelin two-star Ever included Tansy’s outstanding 2023 Signal Ridge Pinot Anderson Valley in the shipment for our Waitlist wine club. 

This wine was grown on a site that reaches over 2,700 feet of elevation atop Cold Spring Mountain—the highest Pinot site in Mendocino, Sonoma, and Napa counties. This organically farmed site benefits from cool, fog-laden mornings and diverse soils, yielding absolutely phenomenal Pinot Noir grapes.

With that outstanding fruit, winemaker Megan Glaab—who has Torbreck, Peay, Marcassin, and Pisoni on her résumé—has crafted a Pinot of beautiful elegance and structure. With a dark red core in the glass, it’s got aromas of deep red fruits, exotic spices, and herbs, all cradled in a basket of red roses. The palate is lush, silky, and spiced, with dark cherry, plum, and kola nut in the midpalate and silky tannins carrying a long and joyful finish.

Tansy Wines is the work of three seasoned wine professionals: Glaab, celebrated sommelier and author Shelley Lindgren (SF’s A16 restaurant), and wine industry veteran Kitty Ostlein. With complementary talents spanning production and hospitality, this team is crafting site-specific, minimal-intervention wines that we absolutely love.

The team at Chicago’s Ever matches this energetic Pinot with duck with savory truffle, Cara Cara orange, and maitake mushrooms. The wine’s nimble acidity slices through the dish’s depth while its earth-driven notes match the mushrooms perfectly. It’s a precise, well-structured pairing that sings from start to finish, and it will elevate anything you decide to drink it with.
