Terroir and latitude: Those are two of the biggest factors in Champagne’s magic formula. The brisk conditions and limestone-rich soil combine to make wines to which very few others can compare. 

The exception, though, might just be the sparklers from the south of England. Just a degree or two farther up on the globe than Champagne, the region enjoys a cool climate similar to what Champagne has traditionally known. The soils are limestone-heavy too. The Goring family has been the custodian of Wiston Estate since 1743, when it was acquired by Edward Goring. For generations, the family has carefully stewarded the estate's land, originally focusing on farming and conservation.

In 2006, Pip and Harry Goring transformed Wiston’s future by establishing a vineyard, recognizing the chalky soils and cool climate as ideal for producing world-class sparkling wines. Their vision has elevated Wiston Estate to prominence—in English viticulture, yes, but they’re obviously making waves well beyond.
