Story
Like most McLaren Vale estates, d'Arenberg is a family-owned property that focuses on small-production wines. Founded in 1912 by an ancestor of present-day proprietor Chester Osborn, d'Arenberg adheres to the traditional labor-intensive practices that have helped it earn a place in the top ranks of Australia's boutique wineries. The winery is also known for its wit. A Bordeaux-like blend, this wine fits the profile of the garagiste wines of Bordeaux--great wines made by producers in their garages, outside of the appellation d'origine contrôlée system. Osborn references those irreverent offerings with the name of this wine, which, like all d'Arenberg reds, is foot-trod and basket-pressed in the winery's old galvanized steel (hence "Galvo") shed. The 2006 vintage was exceptional for Cabernet.
Sense
A hint of bay leaf and dark chocolate adds a savory lift to the dense bouquet of blackberry and baked cherry aromas.
Savor

Serve
Rare steaks, hearty roasts and grilled red meats will provide the protein, fat and smoky taste that bring out the best in the d'Arenberg. Lamb is also a classic pairing with Cabernet Sauvignon. Ingredients that play to the wine's plush flavors, such as Asian seasonings, dried fruit or chutney, will work well. Pick up the d'Arenberg's spice notes with curry, cardamom, cinnamon or cloves.
Serving Instructions
Serve a little cooler than room temperature: open 1 hour before serving and refrigerate the bottle for the final 10 minutes.
