Skirt Steak with Red Chili-Cilantro Chimichurri
Ubiquitous in Argentina, where it’s served over grilled beef, chimichurri is a simple sauce made from vinegar, fresh green herbs, garlic and spicy red pepper. In this recipe, the condiment is used as a marinade and basting sauce, infusing the meat with its bold flavors and cutting through the meat’s richness.
This Malbec hails from Mendoza, Argentina’s
main wine region. Mendoza is one of the drier
places on Earth and not an obvious wine
zone. But with peaks as high as nearly 23,000
feet, the Andes reach up to capture all precipitation

A swirl of the glass releases aromas of black raspberries, currants and boysenberries
with hints of leather and molasses.
Flavors of blueberry, black cherry, mushrooms and coffee unfurl on the palate.
Grilled steak makes a natural companion to the bold character of Argentinian
Malbec. Any strongly flavored beef dish, such as beef ribs or richly sauced
steak, will also work. Searing on the grill until the meat takes on a crisp,
smoky crust ensures that the meat will marry with the oaky toast in the wine.
