Oysters with Cracked Pepper Mignonette
Shucking oysters is a straightforward process when you have the proper equipment: an oyster knife, a clean kitchen towel and a bowl to capture any drops of the delicious liquor that may spill out as you are opening the shells. Once you have inserted the knife into the oyster hinge, rotate it as you would a door knob to pry the joint apart.
Ch. & A. Prieur was established in 1825 in
Vertus, today considered one of Champagne’s
great wine-producing villages. Founder Jean-
Louis Prieur named the house after his two
sons, Charles and Alphrede. The estate was
owned by the Prieur family until 2005, when it
was sold to a grape grower based in the same
village. Vertus is one of the primary towns in
Champagne’s Cote des Blancs, famous for producing
the best Chardonnay. In the tradition of
most good nonvintage bruts, this wine is based
on the specialty of the home town, Chardonnay,
but it also looks to the other major regions
of Champagne for its blending elements—the
Montagne de Reims zone for Pinot Noir and
Vallee de la Marne for its signature crop, Pinot
Meunier. This is a classic brut Champagne displaying
a wonderfully creamy texture, distinct
flavors and impressive intensity.
The nose contains yeasty aromas of brioche and lemon tart with suggestions
of white flowers.
Notes of white peaches merge with apples, almonds and citrus zest.
This Champagne is as versatile as it is effervescent. Rich enough to partner
with substantial fare—savory bread pudding or creamy potato-leek soup,
for instance—it has a minerality and a freshness that make it equally stunning
as an aperitif with hors d’oeuvres or a first course. Try it with warm
gougeres, or take a classic approach and serve it alongside smoked salmon,
caviar, toast points and creme fraiche. Great matches include Asparagus-

Serve well chilled: refrigerate the bottle for 45 minutes before serving.
