Behind this red’s humble “Bourgogne” appellation is a single-vineyard wine of rare pedigree. It’s part of Domaine Arlaud’s star-studded lineup that includes wines made from some of the Côte de Nuit’s most prized vineyards. The Roncevie Vineyard is located in Gevrey-Chambertin, an ancient village in the Côte d’Or that’s home to some of the world’s priciest Pinot Noirs. Once considered a part of the official Gevrey-Chambertin wine district, Roncevie was reclassified in 1964 in a bureaucratic move that stripped it of its exalted status. Today the land is farmed organically by the Arlaud family, who acquired it in 1964 and replanted much of its vines. At nearly 50 years old, those vines are farmed according to the same exacting organic standards as the rest of the Arlauds’ vineyards. Only the ripest fruit is picked, and the grapes are painstakingly sorted by hand, twice, before crushing. This kind of attention to detail has put Arlaud among Burgundy’s most consistent producers.

Pinot Noir’s mild tannins and relatively high acidity make it a particularly versatile wine at the dinner table, and the Domaine Arlaud Roncevie is no exception. Pork, poultry, veal, game, lamb and beef all make fine choices to accompany it, as do meatless pasta and risotto dishes. More important than the protein or starch you choose is its sauce: avoid very spicy foods, very acidic foods or dishes with overt sweetness. Simply flavored roasts, chops and stews won’t obscure the complexity of the wine. Try earthy accent ingredients such as mushrooms, onions, lentils or root vegetables.
