Grilled Whole Fish
In this recipe, mild freshwater fish are rubbed with a pungent paste of garlic and fresh herbs then grilled alongside thin slices of lemon. Sicily is home to ancient vines and intriguing grape varieties. Most of the island’s best vineyards, including the Di Giovanna property, are located on the slopes of volcanoes. Founded by local businessman Aurelio Di Giovanna and his German wife, Barbara, the 138-acre estate lies at an altitude of 2,600 feet, not far from the peak of Monte Genuardo. While lowland Sicily stays hot all summer, the island’s mountain vineyards cool off in the evenings, encouraging grapes to ripen slowly and evenly. Grillo was once used chiefly to make Sicily’s famous fortified wine, Marsala, but has been more recently embraced as a source of juicy, zesty whites. Named for the owners’ sons, Gunther and Klaus, the G&K Grillo was made with hand-picked, organically farmed grapes. French consulting winemaker Dominique Delteil assisted with the bottling, which offers a freshness and citrusy perfume that call to mind Sauvignon Blanc.

This wine’s medium body and bright, minerally fruit flavors will be fabulous with light poultry dishes and seafood. We enjoy it with flaky white fish, like halibut, sea bass or flounder, but shellfish makes a great match too. If you’d typically serve a dish with a squeeze of citrus, chances are it will be a great match for the G&K Grillo. Try it with fish tacos, grilled scallops, chicken or veal scallopini, or baked whole fish.
Serve well chilled: refrigerate the bottle for 45 minutes before serving.
