Story
This succulent red comes from Sainte-Foy- Bordeaux, an under-the-radar zone in Bordeaux’s southeastern reaches that’s the source of decent but rarely exceptional red and white wines. But one sip of this bottling from Chateau Carbonneau made clear that we had located a diamond in the rough. While inexpensive Bordeaux is often thin and simple, this one delivers the rich black-currant flavors and complex aromatics more common to the more prestigious (and pricey) regions to the west. Chateau Carbonneau is a meticulously maintained winery (and bed-and-breakfast) run by Wilfrid Franc de Ferriere and his New Zealander wife, Jacquie. The couple replanted the estate’s vineyards in the early 1990s in a complete overhaul. The investment in the vines paralleled a change in the winery: the Franc de Ferrieres brought on a New Zealand native as consulting winemaker, which helps explain this cuvee’s winning combination of bold fruit flavors and restrained balance.

Pretty black-currant aromas are edged in notes of violet, herbs and graphite.

Serve
Red meat dishes are classic accompaniments to Bordeaux, for good reason: the proteins in the meat smooth out the tannins in the Cabernet while playing to the plumpness of the Merlot. For accent ingredients, look to earthy, pungent and slightly herbaceous flavors. Excellent choices include olives, mushrooms, fresh and dried herbs, eggplant, fennel, onions and garlic. Serving Instructions
Serve a little cooler than room temperature: refrigerate the bottle for 10 minutes before serving.
