Story
Hailing from the Sierra Foothills in northeast California, this Cabernet Sauvignon is a terrific example of the area’s potential. Most of inland California is too warm to grow quality wine grapes, which is why most high-end viticulture is based on the coast. But the high elevations of the Sierra Nevada provide a relief from summer heat, as warm days, cool nights and lean mountain soil make an ideal home for full-bodied, heat-loving red-grape varieties like Syrah, Zinfandel and Cabernet Sauvignon, which have become the region’s specialties. This Cabernet Sauvignon comes from Chatom Vineyards, one of the area’s pioneering wineries, founded by Gay Callan in 1980. Chatom’s 65 acres of estate vineyards are located in Calaveras County’s stunning Esmeralda Valley. All of the fruit is vinified on-site at the winery. The Chatom Cabernet’s serious structure, deep fruit, overall harmony and reasonable price make us look forward to more Sierra Foothill reds. Less than 1,500 cases were produced.

The notes of spices and savories in the Chatom Cabernet Sauvignon suggest a meal of herb- or spice-rubbed steaks or chops. Grilled red meats or vegetables are a wonderful complement to Cabernet, as the hint of bitterness from the char marries with the primary ripe fruit flavors. On the other hand, the suppleness of the wine would also pair well with a more gently cooked steak under the broiler.
