Story
While not necessarily a household name outside of the region, Château Tour de Mirambeau is an important winery in Bordeaux, as it was one of the first to embrace modern winery construction and technology to improve its wines. The land in Bordeaux has been in the holdings of the Despagne family for over 250 years, though the grapes were often sold off. But in 1969 Jean-Louis Despagne, at age 28, took over when his father died. Jean-Louis had travelled to North and South America and was impressed by the vision of modern, technically pristine wines, as exemplified by the likes of Napa’s Robert Mondavi. Upon returning home, Jean-Louis spearheaded an ambitious effort to modernize the vineyards and the winemaking facilities, creating one of the most contemporary operations in Bordeaux. His vision continues today under the stewardship of his son, Thibault, who has hired consultant Michel Rolland to help craft wines that are true to their Bordeaux terroir, but also express the finer points of modern wines, namely early drink-ability and a certain suaveness of character.

Serve
The Château Tour de Mirambeau is predominantly Merlot, with flavors and texture a little softer than the Cabernet Sauvignon usually found in Bordeaux. While the traditional matches for the grapes are similar, Merlot’s inherent roundness and gentle structure suggests meats cooked to tenderness and elegance: lamb shanks braised in red wine, beef stew, or rich cuts slow cooked over low heat on the barbecue. For accent ingredients, look to earthy, pungent and slightly herbaceous flavors that will set off the fruit. Excellent choices include olives, mushrooms, fresh and dried herbs, eggplant, fennel, onions and garlic.
Serving Instructions
Serve a little cooler than room temperature: refrigerate the bottle for 10 minutes before serving.
