Story

Bodegas Valentin Bianchi is an Argentine winery founded in 1928 that owns more than 700 acres in Mendoza, the country's premier red-wine region. This Cabernet comes from the estate's Asti Vineyard in southern Mendoza. Here, chilly nights follow warm, sunny days, ideal for encouraging thick skins on Cabernet Sauvignon (a key to the wine's flavor) and for giving the grapes the long hang-time they need to develop complexity. Winemaker Francisco Martinez, who has been with Bodegas Bianchi for more than 30 years, made sure the grapes were picked by hand then carefully sorted. After fermentation, the wine matured in new oak barrels for 14 months. Additional years of bottle age prior to release helped to mellow and integrate this structured red.
