Story
The Chablis wine district may be within Burgundy, but it is geographically more similar to the Champagne region. Its clay and limestone soils produce flinty, high-acid whites that contrast with the richer, rounder whites of Burgundy’s Côte d’Or. That two areas so close together can make such different wines from the same grape, Chardonnay, epitomizes the French notion of terroir—the idea that a wine reflects the characteristics of its environment. This example from Albert Pic is the estate’s top cuvée, made in exceptional years from the best lots of old-vine grapes. It was aged exclusively in tank to maintain its bright intensity. And while most Chablis producers age even their top cuvées in bottle only briefly, the Pic estate generally ages its wines for five to seven years before release. This is an extraordinary commitment, but a sip of the perfectly aged 2005 Pic 1er shows that it’s worth it. (“1er” is an abbreviation for “Premier,” pronounced prem-yay.)

Serve
The high acidity and pronounced minerality of Chablis make it the quintessential wine for luxurious shellfish dishes. The Pic 1er Chablis will show beautifully when accompanied by lobster, crab, scallops and oysters. And its briny flavors will pair well with salty, savory fare such as charcuterie and substantial salads. But the wine’s weight and structure will also complement richer fish dishes made with salmon, halibut and sea bass and mild chicken and veal dishes. Keep seasonings subtle—a bit of citrus zest, fresh herbs or simply prepared vegetables are all that’s needed—and use sweet ingredients, such as sugar, fruits or caramelized vegetables, sparingly.
