Story
Legendary vintner Carlos Pulenta makes his Tomero wines in Luján de Cuyo, the heart of Argentina's finest wine region, Mendoza. Pulenta's father came upon these lands 30 years ago and planted some of the first vineyards in the area. After a successful career as an executive at two of Argentina's largest wine companies, Pulenta returned to his family's farm to create the boutique wine estate of his dreams. Completed in 2005, the winery is located at an elevation of nearly 4,000 feet with a spectacular view of snow-capped Andes peaks. For this wine, Pulenta honors the tomero, the official who regulates the channeling of meltwater from the Andes. In a region that sees as little as seven inches of rainfall a year, the tomero holds the livelihood of every farmer in his hands. Grapes for this lush Cabernet came from vineyards in the neighboring Uco Valley, another prime Mendoza microclimate. Pulenta chose to have oak play a minor role: just 20% of the wine was aged in new French oak barrels, allowing its pure fruit flavors to come through.

The notes of herbs and spices in the Tomero Cabernet Sauvignon and its Argentinean origin suggest a meal of herb- or spice-rubbed steaks or chops. Grilled red meats are a wonderful complement to young Cabernets like the Tomero: the hint of bitterness from the char marries with and offsets the edge of bitterness in the wine's tannins.

Serve a little cooler than room temperature: refrigerate the bottle for 10 minutes before serving.
