Story
Founded by Jean Febvre, a barrel maker, in 1840, Simonnet-Febvre originally specialized in sparkling wine known today as Cremant de Bourgogne. Over the years, the Febvres acquired holdings in some of the greatest terroirs in Chablis. In addition to producing Cremant de Bourgogne, the winery has an outstanding reputation for Chardonnay. Chablis is the northernmost subregion of Burgundy, and the vineyards are closer to the Champagne region than the Cote d’Or, producing wines known for their steely minerality and lively acidity. In 2003, Maison Louis Latour purchased Simonnet-Febvre, renovated the winemaking facilities and implemented sustainable vineyard practices—changes that have had a positive impact on quality.

The nose emanates aromas of lemon, biscuit dough and minerals.

Expect a delightful toastiness with lime and lemon zest flavors.
Serve
This sparkler is as versatile as it is effervescent. Rich enough to partner with substantial fare—lobster bisque, scallops in a butter sauce or lemon risotto, for example—it has a minerality and freshness that make it equally stunning as an aperitif with hors d’oeuvres or a first course.
