Pumpkin Risotto with Sage and Pecorino Toscano
Chef Maria Helm Sinskey, who created the recipe, notes,
“Texture is everything with risotto. I prefer my risotto with a
little tooth, so I cook it a little less. The rice should have enough
liquid so that the texture is creamy but not soupy.”
While winemakers in many parts of California
struggle to prevent their grapes from becoming
overripe, the Los Carneros region benefits
from near-constant winds and regular fog from
nearby San Pablo Bay, the northern extension
of San Francisco Bay. These cooling ocean currents
make Carneros perfect territory for coolclimate
grapes like Pinot Noir. Robert Sinskey
and winemaker Jeff Virnig aim for graceful
midweight wines that showcase savory flavors
like spices, herbs and earth in addition
to sweet fruit. The Sinskeys own more than
200 acres of vineyards in Carneros and Napa
Valley, all of which are farmed organically. In
2008, drought and frost brought down yields
in their Carneros vineyards, which meant far
fewer grapes on the vine but intense flavors in
the fruit. Virnig fermented many of the grapes
as whole clusters to minimize harsh tannins.
The result is a fragrant, deeply flavored Pinot
Noir with supple texture.

Crisp red-fruit flavors of wild strawberries and cherries mingle with savory
notes of earth, cinnamon and clove.
Flavorful and intense enough to stand up to poultry, pork, game and red
