Story
Prosecco is the sparkling wine of Italy’s Prosecco region, located in the northeastern province of Treviso. Made from the local Glera grape, Prosecco is often a light, innocuously fizzy wine churned out in bulk. But when produced from ideally sited grapes grown for quality, not quantity, as with this version from the familyowned Pasqua Winery, Prosecco offers more than simple refreshment. Founded in Verona in 1925 by an ancestor of the current owners, brothers Carlo, Umberto and Giorgio Pasqua, the winery sources grapes for their Prosecco from the hills of Valdobbiadene, where shallow soils produce the most flavorful and aromatic grapes. Like most Prosecco, it’s made using the Charmat method, meaning that the wine gets its bubbles from a natural, secondary fermentation in tanks. Although it’s labeled “Extra Dry” due to the hint of residual sugar in the wine, Pasqua Prosecco tastes zesty thanks to its balanced, natural acidity.

Perfumed aromas of white peach, green apple and a light floral note define this sparkler’s pretty bouquet. Once poured, a generous creamy mousse tops the wine, which is straw colored with greenish hints.

The juicy, fruity palate bursts with creamy green apple and apricot flavors and crisp acidity. Refreshing, dry and light-bodied, it finishes with snappy acidity and lingering fruit flavors.
Serve
Thanks to its low alcohol and crisp, fruity flavors, the Pasqua Prosecco makes a fantastic aperitif and an ideal accompaniment to a wide variety of hors d’oeuvres. Try it with smoked fish served on apple slices, poached shrimp accompanied by a zesty sauce or with marcona almonds and charcuterie. Avoid serving the wine with sweet desserts, which will make a dry wine like the Pasqua Prosecco taste bitter.
