Roast Chicken Stuffed with Gruyère, Bread and Sausage
Gruyère is a good cheese to use for stuffing and for gratins because
it both melts evenly and retains its essential character.
Here, it contributes extra flavor and texture to a traditional
bread-and-sausage stuffing for roast chicken.
Parallel is the realization of the dream of four
couples who met skiing the slopes of Park
City, Utah. The après-ski would usually involve
sharing a good meal and bottles of great wine,
which cemented the couples’ friendships and
similar goals. The name “Parallel” denotes
many things—the founders’ shared passions,
tracks of skis in the snow, rows of vines in a
vineyard. These are symbolically represented
by the artfully designed label on the first Cabernet
Sauvignon released by the team in 2005.
The first Chardonnay came two years later,
making this bottling the third release. To produce
it, the owners hired superstar winemaker
Philippe Melka, who looked to the Russian River
Valley for Chardonnay fruit starting in 2008.
During the growing season, the cool ocean fog
rolls in during the late afternoon, allowing the
grapes to ripen more slowly while retaining flavor,
aromatic intensity and elevated acidity. The
wine is fermented in French oak puncheons for
a rounded texture with great structure.
Swirl the glass to release aromas of ripe peach, honey, baked apples, vanilla
This Chardonnay exudes rich citrus and stone-fruit flavors on a mouth-filling,
creamy body garnished with smoke and spice.
French oak has a deep impact on Parallel’s 2010 Chardonnay, imbuing it with
richness and weight. While the wine sips nicely without food, it is best enjoyed
with dishes of similar weight and body, such as rich seafood entrees
and poultry. Cream-based sauces will heighten the match. Look to williamssonoma.
