Ren and Marilyn Harris own and manage Paradigm, a small estate in Oakville, the heart of Napa Valley's most famous Cabernet region. Owners of the property since 1976, the Harrises produced their first vintage in 1991, hiring then-up-and-coming winemaker Heidi Barrett. Fans of cult Cabernets will recognize Barrett's name, as she went on to become one of the most celebrated winemakers in America. Her steady hand coaxes the best out of Paradigm's vineyards, which are the winery's sole source of grapes. Barrett says she "enjoys working with an extraordinary vineyard site that has been farmed impeccably for years." The 2007 vintage was wonderful throughout California but in particular for Napa Valley. Cabernets here rarely have difficulty achieving ripeness, but they do not always develop such deep layers of flavor while retaining a dense, finely woven textural integrity. The perfect maturity of the vintage yields a wine that is lovely to drink now but will also develop gracefully over the next generation.

Because the Paradigm's tannins are well integrated (that is, not drying or prickly), the blend provides more food-pairing options than do most young, intensely structured Cabernets. While typical matches like well-marbled steaks, chops and roasts will work beautifully, lighter meats like veal and pork make excellent choices as well. For accent flavors, pick up the Paradigm's earthy elements with bell peppers, mushrooms, eggplant or root vegetables, or incorporate fresh green herbs to reflect the wine's herbaceous qualities.
Serve a little cooler than room temperature: refrigerate the bottle for 10 minutes before serving.
