Story

Cava is Spain’s answer to Champagne. By law it must be made in the same painstaking way as its French counterpart—with the secondary fermentation (the one that creates the bubbles) happening within each sealed bottle. In a market that’s dominated by a few giant wineries, Cava is not often thought of as an artisanal product, yet impressive bottlings are crafted by small producers like Louis Drescher. The winery is located in the Penedès region of Catalonia, where cooling breezes from the Mediterranean Sea help preserve the grapes’ natural acidity. The vines that created this sparkling wine average 50 years old and are low yielding, producing grapes with great intensity. Cava (Catalan for “cave”) refers to the cellars where these bottles spend time coming into their own. With close to three years of bottle maturation, this Cava offers outstanding complexity. Only 1,000 cases were made.

Sense

In the nose, expect hints of lemon and lime zest with a chalky undertone.

Bright natural acidity and a rich, concentrated palate make the Louis Drescher Amor Cava excellent both as an aperitif and with hors d’oeuvres or light first courses. Alongside richer appetizers like pâtés and rillettes, the wine offers a refreshingly cutting contrast. With lighter foods like crostini, nuts and olives, the wine’s deep flavor holds up beautifully. It also makes an apt companion for soups—both broth- and cream-based—as well as fish and shellfish courses.

Serve well chilled: refrigerate the bottle for 45 minutes before serving.
