Veal Chops Stuffed with Herbs and Lemon
In this recipe, we add fresh herbs and lemon to a succulent veal chop. Veal rib chops carry quite a bit of fat along
the bone, and if you were not stuffing them, you might be tempted
to ask the butcher to french the bones. But here that extra surface
area is needed to accommodate the herb and lemon stuffing. You
can trim away the fat from the bones before serving, if desired.
In 1991, San Francisco Bay Area doctor Jan
Krupp answered an ad selling an undeveloped
piece of property in Napa’s eastern hills. He
recognized good soil there and was buoyed
to find some old vines. Development of the
property began in 1995 and entailed clearing
millions of pounds of volcanic rock, including
some boulders the size of SUVs. Then Krupp
needed water. A geologist surveyed the plot
and suggested drilling at five spots to a depth
of 300 feet. None yielded a drop. So Krupp
enlisted a “water witch,” who, with a pair of
copper rods, found a spot and said, “Drill here
to 400 feet.” Indeed, there flowed a subterranean
river. Today, the land encompasses three
vineyards: Krupp, Krupp Brothers and Stagecoach,
the latter of which comprises over 600
acres and sells fruit to many of California’s
top producers. Fruit for this Chardonnay came
from the Stagecoach and Krupp Brothers vineyards
at an altitude of about 1,550 feet.
The generous nose offers ripe pear and peach, with hints of pineapple, honey
and buttered scone.
In the mouth, expect flavors of peach, toffee, hazelnut and fresh cream.
A subtly flavored grape that is easily undermined by pungent ingredients,
Chardonnay pairs best with mildly flavored fish, shellfish or poultry, or luxuriously
sauced pasta or rice. The Krupp Brothers Chardonnay’s creamy texture
will match well with similarly rich, mild foods, such as avocados or cream and
butter sauces. Other outstanding options include lemon or butternut squash
risotto, savory bread pudding or fresh egg pasta with a creamy mushroom
