Producing complex, delicious sparkling wine requires an intense amount of hand labor. Chardonnay and Pinot Noir, the traditional grapes of France's Champagne region, must be hand picked to keep their delicate skins from rupturing before reaching the winery; wine must be aged on its lees (spent yeast cells) and stirred by hand during aging; and carbonation is achieved not by gassing still wine with carbon dioxide (the method used to make mass-produced sparklers) but by allowing the wine to ferment naturally inside the bottle. This impressive (and well-priced) nonvintage rosé, produced using traditional Champagne methods, is made by Graham Beck, the eponymous winery of the South African entrepreneur who founded the estate in 1983. Beck's insistence on handcrafting wines is no doubt why this estate has risen to the forefront of South Africa's sparkling wine producers. Some of the grapes for this wine came from Robertson, an area in South Africa's Western Cape region famous for its limestone soils. Similar to the soils of Champagne, they impart a hint of minerality to the wine.
A very pretty salmon color, this wine bubbles up in a fruity, silky mousse (foam cap) that is redolent of strawberries and cantaloupe.

A wine as pretty and vivacious as this one is perfect for uncorking when the occasion calls for a little charm and romance, which is why we've sent this sparkler in time for Valentine's Day. Light enough to drink on its own or accompanied by a bowl of strawberries, the Graham Beck Brut Rosé will be wonderful before dinner with mild cheeses, such as fresh goat cheese or a creamy Brie. The wine's touch of sweetness makes it a good match for not-too-sweet desserts as well; choose recipes that have a bit of acidity from fresh fruit and go easy on the sugar.
