Sole en Papillote
Food cooked en papillote describes a dish that has been encased in parchment paper and then baked. Moisture within the packet is prevented from escaping, and the resulting steam gently cooks delicate ingredients, such as the sole here, without browning. As it bakes, the fish is infused with the fennel, lemon and herbs included in the parchment.
A cliché in the wine world is that it takes a lot
of beer to make great wine. Phil Sexton, the
founder of Giant Steps, fashioned a career
of making both. After completing a degree in
brewing and fermentation sciences, Sexton
began Little Creatures Brewing and Devil’s
Lair winery, both in Western Australia. Selling
those successful ventures gave him the
capital necessary to found Giant Steps in the
late 1990s after moving across the country
to the Yarra Valley, just outside of Melbourne.
Named for the seminal 1960 jazz album by
John Coltrane, Giant Steps is itself an artful
and ambitious project. Grapes are harvested
from estate, leased and long-term-contracted
vineyards to produce single-vineyard wines
meant to express the distinctive terroir of the
site and the region. The grapes of Burgundy—
Chardonnay and Pinot Noir—are the main

on shellfish, flaky white fish or poultry. Rich starches like egg pasta, Arborio
rice or puff pastry will also work well. Complement the dish with earthy, silky
