Story
The transformation in France’s Languedoc region, which runs along the Mediterranean coast roughly from Avignon to the foothills of the Pyrenees Mountains, has been remarkable. Everyone from prestigious Bordeaux vintners to fashionable Parisian families wants to own a piece of the Languedoc, whose potential for greatness is not only being realized in the vineyard but also recognized worldwide. This Syrah comes from Chateau Haut-Blanville, an estate not far from the coast, near Montpellier. Parisians Bernard and Beatrice Nivollet bought the property in 1997 and completely renovated both the vineyard plantings and the impressive chateau where they make their home. Clos des Legendes, the eight-acre Syrah vineyard that produces this wine, is planted on a rocky hilltop in the Herault Valley. Composed of large granite rocks and limestone, the well-drained soil imparts a pronounced minerality to this wine, the family’s top cuvee.
Sense
The complex nose shows violet highlights, barely ripe blackberry fruit and classic Languedoc garrigue, the aroma of the wild rosemary, thyme and lavender that grow throughout the region.

Flavors include violets, soft plum fruit, savory meaty notes and highlights of lavender and rosemary.
Serve
Think herbs, dried or fresh, with a range of meats or vegetables when pairing the Clos des Legendes, which will highlight the most distinctive attributes of its garrigue-laced Languedoc terroir. The wine has a firmness that comes from the stony soils where it was grown, but its polished tannins and balance make it a more flexible food partner and a fine match for roast chicken, steak or lamb. Serving Instructions
Decant and serve a little cooler than room temperature: refrigerate the decanted wine for 10 minutes before serving.
