Story

Made using the labor-intensive methods first pioneered in France, Cava is Spain's answer to Champagne. While most of Spain is too warm to grow white grapes for Cava, Catalonia, on the country's northeastern coast, has an ideal climate for making the sparkling wine. The region is cooled by breezes from the Mediterranean Sea, which helps to preserve the grapes' natural acidity--a key to making a crisp, dry sparkling wine. Located in Penedès, Catalonia's most prestigious Cava zone, Bodegas Pinord is a family-owned winery that uses only grapes grown on its 247 acres. This tight control over quality, plus the vineyards' prime location, makes Pinord's Chatel Cava one of the best values in Spanish sparkling wine. The Brut Reserva has a minerally edge, thanks to the area's chalky limestone and sand soil.

Serve

Bright natural acidity and a medium-bodied palate make the Chatel Cava excellent with hors d'oeuvres. Dry with a hint of sweetness, it can also accompany a first course of vegetables, shellfish or fish in a light, citrusy sauce. We do not recommend long cellaring for this Cava, which reaches your table in perfect drinking condition.

Serving Instructions

Serve well chilled: refrigerate the bottle for 45 minutes before serving.
