Agnolini with Goat Cheese, Ricotta and Peas
Agnolini, like ravioli, are a filled pasta. These half-moons, made
by cutting the pasta into circles and then folding them in half, are
a perfect pocket for cheese. Ricotta is the traditional filling, but
goat cheese adds a tang and complements spring peas and herbs.
Casey Flat Ranch is an exciting new project in
the Capay Valley of California. Hardly known
even to wine aficionados, the Capay Valley lies
in Yolo County, just east of Napa Valley. The
vineyards of Casey Flat Ranch, which were
planted in 2004, occupy moderately rocky soils
on a 2,000-foot slope. While moving eastward
in California generally means pushing into hotter
climes, the altitude here provides for cool
temperatures that are roughly equivalent to
top Napa subregions like Oakville and Rutherford
and even cooler than St. Helena, which
is just over 20 miles west of the site. The

affordable wine from meticulously
sourced fruit from beyond the holdings of
Casey Flat Ranch. Only 2,000 cases of this
thirst-quenching white were produced.
The wine bursts with classic Sauvignon Blanc aromas of green apple, lemongrass
and juicy bell pepper.
Brisk flavors of apple and green grass are supported by enticing notes of jasmine
and Key lime pie.
Sauvignon Blanc is one of the most versatile grape varieties. Light-bodied and
crisp enough to serve as an aperitif, it has a brisk acidity that marries well with
spicy foods, shellfish and light fish. It also pairs well with Southeast Asian cuisine
featuring lemongrass, mint or cilantro. Of course, goat cheese is a classic
match. The Open Range Sauvignon Blanc will be delicious with recipes from

with Grapefruit, Parsley and Fennel.
Serve well chilled: refrigerate the bottle for 45 minutes before serving.
