Venture north of Madrid to the dusty sun-baked province of Zamora and you've arrived at one of the world's most exciting wine regions. That's what many people are calling Toro, a Spanish DOC (official winegrowing region) that has drawn attention and investment from some of the most famous names in wine. Bodegas Valduero, a family-owned winery in Spain's Duero River Valley, was founded in the early 1980s by Don Gregorio Viaduero. In 1996, he acquired farmland in the small Toro village of Valdefinjas, which lies in a protected valley a few miles from the Duero River. Viaduero planted the land to Tinta de Toro, a local clone of Spain's native Tempranillo grape. Over the centuries, Tinta de Toro has adapted to the harsh winters and dry summers of this remote region, yielding red wines with fresh acidity and spice-inflected flavors of plums, tea and dark berries. Viaduero's talented daughter, Yolanda Garcia Viaduero, has headed up winemaking since the winery's inception. In contrast to crianza Tempranillos, which are aged in barrels before being bottled, this joven, or "young," wine saw no oak aging, which allowed its fresh berry flavors to emerge.

Play to this juicy Tempranillo's spicy side by pairing it with fajitas, tacos, chili, empanadas, or pork or beef sausages. For more elegant fare, look to pork, which is a favorite match for Tempranillo in Spain. The Esencia's juicy freshness makes it a natural with salty cured meats, such as sausages, Serrano ham or a whole ham roast. For fresh pork, rustic roasts and quick-cooking chops make equally great choices, especially when seasoned with fresh herbs or baking spices, such as clove or cinnamon.
